To Muslims: Understanding Islam from books by ex-Muslims?

all muslim know how to say out of context. so why want just one muslim refute it by putting it in context. the same with the standard answer; bad hadith. why don't they explain that the hadiths were recorded by devout muslims and give the reason why they lied about their beloved prophet of allah?
